It continues: “Satur- ated fat is NOT dangerous, contrary to what you have been led to believe!” That statement flies in the face of everything I’ve been told by virtually every medical authority. Klein busts this myth with evidence that dispels the misconception that saturated fat causes cardiovascular disease (CVD). Who knew?! He educates the reader on the two different types of oil – healthy and harmful, the basic structure of fats and oils, etc…all with the aid of helpful diagrams to illustrate. As we are now learning, the incidence of CVD has significantly increased over the past hundred years, even as our consumption of saturated fat has dramatically decreased. The substantial scientific evidence showing the health benefits, importance and safety of saturated fat is overwhelming. As Klein writes, “We need to embrace [organic] butter, cream, eggs, animal fat and coconut oil as health foods. Saturated fat is important for human health and eating less and less of it has cost us our health.” Lest the meat lovers among us get carried away, he does caution that the following sources of saturated fat are indeed linked to CVD: inorganic and processed meats such as luncheon meats, cold cuts, sausages and other types of meats prepared with additives and preservatives.
