2 cups arams or hijinks (seaweed cut into thin strips)
4 cups filtered water
1 cup cucumber, quartered and chopped
½ cup green onion, chopped
½ cup fresh parsley, chopped
2 Tbsp toasted sesame or extra virgin olive oil
½ cup carrots, julienne or shredded
¼ cup lemon juice)
Rinse the seaweed well. Place in a small pot with the water and bring to a boil for 7 minutes. Drain and place in large mixing bowl. Add remaining ingredients and mix to combine. (This salad will last for up to 3 days in the fridge.)
