Golden Baked Pumpkin with Cranberry

From the Vitality Food Feature ‘Golden Goblins‘.

This is a healthy alternative to the sweet yam and marshmallow side dish traditionally served at Thanksgiving.

(Makes:  6 servings)

Ingredients:

  • 2 cups pumpkin cubes
  • 2 Tbsp butter
  • 1/2 onion, finely chopped
  • 2 Tbsp brown rice syrup
  • 1/4 cup dried cranberries
  • 1/8 tsp ground nutmeg
  • salt and pepper to taste

1) Preheat oven to 375°. Lightly oil a 1-quart baking dish.

2) Bring a large pot of salted water to the boil. Add pumpkin cubes to the water; cover and cook for 10 minutes or until flesh is easily pierced with a fork. Drain well and return to the pot.

3) Mash hot squash and beat in butter, salt, and pepper. Stir in onion, rice syrup and cranberries. Spoon into prepared baking dish, garnish with nutmeg. Bake 45 minutes in preheated oven.
