Coconut Almond Salad Granola

From the Vitality Food Feature ‘DRESS UP YOUR GREENS‘.

Sprinkle one to two tablespoons of this mixture over salads to add texture and extra taste.

Ingredients

  • 3 Tbsp maple syrup or honey
  • 3 Tbsp butter
  • 2 Tbsp vinegar
  • 1/2 tsp salt
  • 1 tsp freshly grated orange zest
  • 1/2 cup flaked coconut
  • 1/2 cup sliced almonds
  • 1 cup rolled oats or spelt flakes
  • 1/4 cup wheat germ

1) Combine brown sugar, butter, vinegar, salt and zest in a small saucepan and cook over low heat, stirring until the brown sugar is dissolved. Remove from heat.

2) Stir together the coconut, oats and wheat germ in a medium bowl. Add the brown sugar mixture and toss until it is combined well. Spread the granola on a baking sheet and bake at 350° F, stirring every five minutes, for 10 to 15 minutes or until it is golden. Cool and store in an airtight container. Keeps about one week in the refrigerator. Makes two cups
