From the Vitality Food Feature ‘DRESS UP YOUR GREENS‘.

Sprinkle one to two tablespoons of this mixture over salads to add texture and extra taste.

Ingredients

  • 3 Tbsp maple syrup or honey
  • 3 Tbsp butter
  • 2 Tbsp vinegar
  • 1/2 tsp salt
  • 1 tsp freshly grated orange zest
  • 1/2 cup flaked coconut
  • 1/2 cup sliced almonds
  • 1 cup rolled oats or spelt flakes
  • 1/4 cup wheat germ

1) Combine brown sugar, butter, vinegar, salt and zest in a small saucepan and cook over low heat, stirring until the brown sugar is dissolved. Remove from heat.

2) Stir together the coconut, oats and wheat germ in a medium bowl. Add the brown sugar mixture and toss until it is combined well. Spread the granola on a baking sheet and bake at 350° F, stirring every five minutes, for 10 to 15 minutes or until it is golden. Cool and store in an airtight container.
