Recipe: Traditional Dandelion Salad

Traditional Dandelion Salad

From the Vitality Food Feature Super Foods for Extreme Longevity

This simple salad can be added to lunch or dinner. Try it with baked sardines for extra omega nutrition!

Ingredients:

  • 8 cups dandelion leaves, chopped

Dressing:

  • 1 tsp finely chopped garlic
  • 1 Tbsp fresh lemon juice
  • ½ tsp pink or gray sea salt
  • ½ tsp honey or coconut nectar
  • ¼ cup extra-virgin olive oil

Optional boosters:

  • 3 freshly baked sardines (use BPA-free canned if necessary)
  • Swap 1 tablespoon of the olive oil for omega-3 oil
  • ¼ cup olives, sliced

Combine garlic, lemon juice, salt, and sweetner in a bowl. Whisk until well combined. Drizzle in oil in a slow, steady stream, whisking until emulsified. Place dandelion greens in a salad bowl. Drizzle dressing over greens, and toss to coat. Top with sardines if desired.
