Recipe: Kale and Quinoa Salad

Kale and Quinoa Salad is packed with protein-rich foods

I had never heard of quinoa when I was a kid, but I sure love it today. (Serves 6 to 8)

Dressing Ingredients:

  • 4 Tbsp lemon juice
  • ¼ cup extra virgin olive oil
  • 2 Tbsp liquid honey
  • 1 tsp dried chilli flakes
  • 3 cloves garlic, crushed
  • ½ tsp black pepper
  • Sea salt to taste

Salad Ingredients:

  • 1½ cups cooked quinoa (cook according to package directions)
  • 4 cups kale, chopped
  • ½ cup cucumber, diced
  • ½ cup black olives, sliced
  • 1 sweet red pepper, chopped
  • ½ cup red onion, sliced or diced
  • ½ cup grape or cherry tomatoes

In a small bowl, whisk together lemon juice, olive oil, honey, chilli flakes, garlic, pepper and salt. Set aside.In a salad bowl, mix together cooked quinoa, kale, cucumber, olives, red pepper, onion, and tomatoes. Pour dressing over top and toss.
