Recipe: Colourful Quinoa Rice Paper Rolls

From the Vitality Food Feature ‘Refreshing Rice Paper Rolls’.

These are as amazing to look at as they are to eat! They are light, tasty, and sure to be a big hit at your next party.

Ingredients

  • 4 sheets rice paper
  • 1 cup red quinoa, cooked according to package directions
  • 1/2 tsp low sodium soy sauce
  • Squirt of lemon juice
  • Black pepper
  • 1 large carrot, sliced thin
  • 8 spears steamed or pickled asparagus, cut to fit on the rice paper
  • 1 sweet green pepper, julienned
  • 1 raw white turnip or daikon, julienned
  • 1 thinly sliced red onion

1) Season cooked quinoa with soy sauce, lemon juice, and pepper. Fluff with a fork and cool.

2) Place a couple of spears of asparagus, green pepper, carrot, and turnip in the centre of the prepared paper.

3) Scatter with red onion slices, and spoon quinoa over top. Roll up.
