Lin’s Basic Miso Soup

From the Vitality Food Feature ‘MIRACULOUS MISO‘.

This recipe makes about 8 cups, but is easily cut in half or doubled. Be creative with your choice of vegetables. I like to make a different batch every time.

Ingredients

  • 6 cups water
  • 4 Tbsp soy sauce
  • 1 tsp sesame oil
  • dash of fresh grated black pepper
  • 1 tsp fresh grated ginger
  • 1 cup Chinese or regular cabbage, finely shredded
  • 2 thinly sliced carrots
  • 4 or 5 fresh mushrooms or a few broken, dried shiitake mushrooms
  • 1 handful snow pea pods
  • 1 stalk thinly sliced celery
  • 4 chopped green onions
  • 3 Tbsp miso dissolved in 1/2 cup hot water

1) Put all ingredients, except green onions and miso into soup pot and bring to a boil. Reduce heat and simmer about 4 minutes. Add miso and stir until blended. Transfer to soup tureen. Garnish with green onions. Ladle up and enjoy.

2) Other vegetables to try are: leeks, onions, okra, green beans, bean sprouts, lettuce, green peppers, green peas, potato or anything else that tickles your fancy in a soup. For a wonderful formal soup, trying adding a handful of prawns, shrimp or other seafood. Diced firm tofu adds body and flair.
