Recipe: Green Bean, Apple, and Ginger Salad

GREEN BEAN, APPLE, AND GINGER SALAD: THE SWEET APPLE, SPICY GINGER, AND FRAGRANT THYME ALL COMBINE TO MAKE THIS A QUICK, EASY, AND DELICIOUS DISH THAT WILL CRUSH YOUR CRAVINGS.

When I made this recipe for my in-laws, my mother-in-law said, “Eating with you is like dining in a restaurant.” The sweet apple, spicy ginger, and fragrant thyme all combine to make a quick and easy delicious dish that will crush your cravings.
(Serves 8)

Ingredients

  • Salad Ingredients:
  • 4 cups green beans, tipped
  • 1 organic ambrosia apple, diced
  • 1 scallion, finely chopped
  • 1/4 cup fresh thyme, stem removed
  • Dressing Ingredients:
  • 3 Tbsp organic olive oil
  • 2 Tbsp lemon juice
  • 1/4 tsp sea salt
  • 1 tsp honey
  • 1 Tbsp ginger root, grated

1) Steam beans for five minutes until crisp and tender. Drain.

2) Place all ingredients into a bowl and toss with dressing until well coated. Marinates well.
