Crispy Curly Fries

CRISPY SPIRALIZED SWEET POTATO FRIES

From the Vitality Food Feature ‘Turning Vegetables and Fruits Into Oodles of Noodles‘.

Here’s a healthy baked snack that disappears in a flash!

Ingredients

  • Sweet potatoes (which are my top pick), potatoes, or yams

1) Spiralize sweet potatoes, potatoes, or yams into long thin curls.

2) Spread them out on parchment paper-lined baking sheets and spray with olive oil.

3) Season as desired (with sea salt, pepper, Cajun spice, etc).

4) Bake in a preheated 400°F oven for 35 to 45 minutes, or until crisp (alternately, these can be deep-fried in vegetable or coconut oil for a special super-crispy treat).
