Black Quinoa and Mandarin Porridge

From the Vitality Food Feature ‘QUINOA CUISINE‘.

Here’s a porridge that’s so good it could come to the table as dessert! (Makes 6 servings)

Ingredients

  • 1 cup uncooked quinoa (black adds drama to the dish)
  • 1 cup orange juice
  • 2 cups water
  • 2 or 3 mandarin oranges, peeled and sectioned
  • Pinch of ground cloves (or cinnamon)
  • Maple syrup or honey to taste
  • Almond, coconut or soy milk (optional)

1) Put quinoa into a rice cooker or saucepan. Add orange juice, water, and mandarin oranges to the pot along with cloves (or cinnamon).

2) Cook for 15 to 20 minutes, or until liquid is absorbed.

3) Sweeten with maple syrup or honey and serve with almond, coconut, or soy milk, if desired.
