(Makes 1⁄2 cup)


  • 2 Tbsp cumin seeds
  • 2 Tbsp coriander seeds
  • 2 Tbsp cardamom seeds
  • 1 stick (3 inch/5 cm) cinnamon, broken into small pieces
  • 1 tsp whole cloves
  • 1 tsp freshly grated nutmeg
  • 1/2 tsp saffron or safflower petals (optional)

1) Place cumin, coriander, cardamom, cinnamon and cloves in a spice mill or coffee grinder and grind to a powder.

2) Stir in nutmeg and saffron.
