Recipe: Colourful Quinoa Rice Paper Rolls

These are as amazing to look at as they are to eat! They are light, tasty, and sure to be a big hit at your next party.
Ingredients
- 4 sheets rice paper
- 1 cup red quinoa, cooked according to package directions
- 1/2 tsp low sodium soy sauce
- Squirt of lemon juice
- Black pepper
- 1 large carrot, sliced thin
- 8 spears steamed or pickled asparagus, cut to fit on the rice paper
- 1 sweet green pepper, julienned
- 1 raw white turnip or daikon, julienned
- 1 thinly sliced red onion
1) Season cooked quinoa with soy sauce, lemon juice, and pepper. Fluff with a fork and cool.
2) Place a couple of spears of asparagus, green pepper, carrot, and turnip in the centre of the prepared paper.
3) Scatter with red onion slices, and spoon quinoa over top. Roll up.
