Baked Herb Stuffed Fish

Ingredients
- 4 Tbsp butter
- 2 medium onions, chopped
- 1 small bunch parsley, finely chopped
- 1 small bunch fresh coriander leaves, finely chopped
- 1 lemon with skin, very finely chopped
- 6 cloves garlic, crushed
- 1 teaspoon finely chopped hot pepper
- 1 tsp paprika
- 1/2 tsp pepper
- 1/2 tsp cumin
- 2 tsp salt
- 1 4 to 5 lb salmon or similar type fish, scaled and washed
- Oil
1) Melt butter in a frying pan, then sauté onions over medium heat for 8 minutes. Stir in parsley, coriander leaves, lemon, garlic and hot pepper, then stir-fry for 4 minutes. Remove from heat, then stir in paprika, pepper, cumin and 1 teaspoon of the salt to make a filling.
2) Stuff fish, then close with toothpicks. Rub fish with oil, then with the remaining teaspoon salt. Wrap in aluminum foil, then bake in a 400 F preheated oven for 30 minutes. Remove foil, then place under the broiler for a few minutes to lightly brown. Serve immediately.
