Recipe: Citrus Cabbage Salad with Orange Coconut Dressing

  • 4 cups thinly sliced cabbage
  • 2 cups shredded carrot
  • 2 apples, finely chopped
  • ½ cup coarsely chopped dates
  • ½ cup coarsely chopped walnuts
  • ¼ cup shredded unsweetened coconut
  • 1 cup Orange Coconut Dressing (recipe follows)
  1. In a salad bowl, combine cabbage, carrot, apples, dates, walnuts and coconut.
  2. Drizzle dressing over and toss to coat ingredients.
