This simple salad can be added to lunch or dinner. Try it with baked sardines for extra omega nutrition!
Ingredients:
- 8 cups dandelion leaves, chopped
Dressing:
- 1 tsp finely chopped garlic
- 1 Tbsp fresh lemon juice
- ½ tsp pink or gray sea salt
- ½ tsp honey or coconut nectar
- ¼ cup extra-virgin olive oil
Optional boosters:
- 3 freshly baked sardines (use BPA-free canned if necessary)
- Swap 1 tablespoon of the olive oil for omega-3 oil
- ¼ cup olives, sliced
Combine garlic, lemon juice, salt, and sweetner in a bowl. Whisk until well combined. Drizzle in oil in a slow, steady stream, whisking until emulsified. Place dandelion greens in a salad bowl. Drizzle dressing over greens, and toss to coat. Top with sardines if desired.
